Chicken Cheese Enchilada

In honor of our new wonderful state of Wisconsin my first recipe will be Chicken Cheese Enchilada's.  Yesterday I cleaned, read my book, cleaned, cooked, ate, played super munchkins, read, and went to sleep.    I told you pretty boring right now.  Same thing to day woke up, got dressed, watch some shows on hulu, eat launch, finished mockingjay, cleaned, cooked, ran to Walmart & hobby lobby, hanged up some pictures, read a couple of capthers of the vow, and eating peanut butter m&m's while typing this.  Tomorrow I am going to clean, try to get a eye exam, hair cut, and we are getting our licences and plates for our car.  I am going to get my craft room done then I will post pictures of our place.  Anyways back to the recipe, When I was younger my mom bought me a cook book at cookbooks in Kearney, NE.  When we got home from our trip mom made me make something out of it with her help.  This is the recipe I choose and I have added changes to it over this year.

Chicken Cheese Enchilada 

8 (8in) Flour Tortillas 
8 to 11 oz of shredded cheddar cheese
3 to 4 boneless chicken Breast cook and shredded 
1 C Salas 
1 Can nacho Cheese soup (I found mine in the soup aisle)
8 oz of Sour cream
1 tablespoon of Taco seasoning 

1) Cook your chicken how ever you like.  You can fry, bake it, or our favorite thing to do is get a whole chicken and cook in the crock pot and shredded it.  Then we put two cups worth in a freeze's bag and freezers.
2)Pre heat oven 350
3)Prepare the soup as directed and set aside. 
4)Mix shredded chicken, sour cream together and taco seasoning.
5) Along one side of each tortilla spread about 1/4 cup of the chicken mixture and roll tortillas Place in a greased 9x 13 backing dish.  
6) Spread the soap over top of the rolled tortilla and sprinkle cheese on top.
7) Bake for 35 minutes and top it with the salsa.

Hello...yes I am still alive....

So I live a very boring live.  All I do is clean, read, clean, and play games.  I didn't think you want to here about my boring days that's why I haven't done anything on here.  For a week and a half Travis said we are going to do something fun on June 16th, but he wouldn't tell me what.  On Friday night he seemed really down, I asked him "whats wrong?"  "That thing I was going to take you to is best to see it in March."  He and I came up with a new plan,  we deiced to go to the farmers market.

 The first one we went to was the west side community market.  It was about the same size as the farmers market in Sioux City.  We walked around their for about twenty minutes.  We got fresh little strawberries, raspberries and garlic.  The second farmers market we went to was around the capital building of our new wonderful state.  On the way their we ate half of our yummy little strawberries and they turned are fingers red :D.  So we get their and we find the most amazing parking spot ever.  So we start walking around we found a beef jerky stand,  Travis got Cajun jerky and I got teriyaki jerky. We sat on the steps of the capital and ate our beef jerky.  After that we Found cool things to take pictures of but, it started to rain!  We got half way through it when we realized we have 20 minutes on our parking meter.  So we kinda walked fast through the rest of the stuff.  At WISCONSIN farmers market their is CHEESE!  We found this really big cheese both that was giving samples yum.  We did buy stuff from their the second time around. We got cajun cheese curds and bacon cheese spread.  At this point the rain was really coming down.  We got to the car, I put my camera bag in the car, Travis grab the umbrella, and we put more money in the meter.  We got back on the side walk went around again where it started raining the first time it stop raining the second time.  We went back to the cheese place and got our cheese.  We decided to go get hot and spicey cheese bread.  If you are ever in madison area go to Stella's Bakery.  It is so great, I can't wait for winter and make tomato soup.  It will go wonderful with it.  We went Hyvee and Copps for some of their deals.  Went home eat some of our yummy finds.  Around 2 I had to take a nap, I was so tired.  I can't wait to go back to the farmers market.  I hope it is really soon.  We had Chinese for dinner and watched the legend of Kora.       

Yesterday, was another very lazy day.  We made breakfast Pizza for dinner and we watch a old avatar episode.  After that Travis and I played munchies, because we are going to Iowa in about two weeks and I better be able to play he says.  During that I made strawbarrie cookies with my farmers market strawbarrys. I am going to go read but I should be cleaning.

Laziest weekend we had a very long time.

This weekend was a very lazy weekend.  Yesterday we decided to go grocery shopping instead of doing it today.  After we got back we hung up my picture frames.  Our ledge in our bedroom had empty pictures frames on it because I wanted to get rid of the box, and I finally got pictures in them yesterday.  Travis then made Cajun Chicken Alfredo for dinner and we watched Tower Heist.  For the rest of the night I read and finished Catching Fire, the second Hunger Games book.  I can't wait to start the third one tonight.

We didn't do much today except  watch some old Avatar episodes and talked about what happening with the new avatar show.  We made a meatball pizza for dinner tonight and we are watching Kung Fu Panda 2.  Sundays we have this thing where we make our own pizza and we watch a movie.  Fortunately we have at least ten different pizza recipes so we don't get bored with pizza.


A very sad thing happened today while making dinner.  We have a bread maker that we call R2D2 because of his looks.  I don't go around naming all my appliances, so don't worry.  Travis and I made pizza dough in it today, and about five minutes later I heard a very big crash in the kitchen and the bread maker stop.  It rocked its way off the counter.  Great big sadness came over me when I walked into the kitchen and found it just laying on the floor. I use it almost every day for making dough.  I never have made bread in it, I just end up putting it in the oven to bake.  Anyway, the casing is kinda coming off.  Other than that it still works.
I am going have to get a new one in the near future I am afraid. Nope, my husband says it works great and I believe him! That what I get for leaving my laptop on while I get a drink.

Goodbye cold stone creamer..... Hello Chocolate Shoppe Ice cream !

haven't left my apartment since Sunday night.  I am not complaining because I got a lot done that I always wanted to do.  I actually have time to read books.  I have gotten three books read since we moved.  Usually it would take me all semester to read one book.  The dishes are not piling up and taking over my whole kitchen.  Our place stays way more picked up than it ever did in Sioux City, and I have time to cook meals that I always want to cook but they were too much of a time hog to do so.  Plus I love seeing my husbands face when he comes to a clean house and dinner on the table. 

But lets face it, we all have to get out once in a while.  So the last two nights I have been trying to get Travis to get some ice cream.  Last night he said ok we will go out and get ice cream tomorrow.  He read about this place called Chocolate Shoppe.  Tonight we went and it was really good.  It really wasn't much to look at in the inside.  But man all the flavors they had.  Tonight I tried  Caramel Chaos which is "Luscious caramel ice cream packed with mini caramel cups and gobs of marble cream caramel."  Travis had Kitty kitty bang bang which is "Irresistibly smooth cheesecake ice cream crafted with a sweet raspberry ripple, tons of Oreos and boat-loads of soft chocolate chunks."  They both where really good.  Next time I am geting Fat Elvis which is "Sweet banana ice cream all shook up with a salty peanut butter ripple and rich liquid chocolate chips."  Families next time you come here we are taking you to this place.  Here is the website with all the flavors so you can pick what you want.  http://www.chocolateshoppeicecream.com/flavors



After we went their we went to Wal-Mart to pick up my pictures for my picture frames that I have.  Once I get them all set up I will take pictures and post them on here.  Hopefully this will all happen tomorrow.  While we were there I found a few intersting things I had to try.  First is peach mango Kool-Aid, I am in love with it.  If you like peach and mango's you will love it too.  Second green apple twizzlers.  If anyone knows me I LOVE Twizzlers and green apple flavor stuff.  Verdict they are wonderful.  I still think green apple jolly ranchers are my favorite. 


We are not going to be doing much this weekend.  I am going to hang up the rest of my picture frames so my walls don't look so boring.

Funny Story

A couple of night ago Travis came home for work and said he talk to our realtor (he is a renter realtor.)  He goes on to tell me their has already been a complaint about us.  I am trying to think about all the things that we have done wrong since we moved here.  The only thing I can think of was we didn't put the books in the right trash bin.  Then he goes on and says that the complaint was called on May 20 (the morning after we moved to Madison.)  Some one called the landlord of the apartment buildings saying their is 6 people living in our unit.  We had 6 people in our unit yes but because they are family and they helped us move.  We didn't even meet the landlord and he even figured it was family members helping use move.  I love know in my life that I can just laugh about stuff that is dumb like this.  That wouldn't of happened three years ago I would of took it to heart.  The minute he got done telling me I started laughing.  He goes that what I though.  Can you image my parents, Travis parents and us in a loft type apartment living together.  Visiting is one thing but living here.  I though it was funny and I want to share it with you guys.

Late for the party

If anyone knows my husband and me we are always late.  So it wasn't any surprise yesterday that Travis wasn't ready when we needed to leave.  He hurry's up and takes a shower and we leave by 11.  But we are supposed to be their at 11.  So 11:30 we showed up to the country club, no one was at the event tent except the event planner of the country club and the caterers.  Travis asked someone "is this for WTS?" "yes"  "are they inside or we just here first?" "no you are the first."  Well that is really weird isn't it.  Well they changed the time of the event and Travis ignored the emails telling him this.  So instead of being a half hour late we where a hour early.  At least we where early for once.


We had tons of fun yesterday, the picnic was very kid friendly but also great for adults.  They had three different caricatures artists their.  We where trying to get all three of them but we ran out of time.  We got 2 our of 3.  They had the fake tattoo artist their, Travis got a turtle and I got music notes.  It was nice to get out and talk to other people.  Travis is really loving this company.  The other company's he was looking at didn't even come close to this one.  For what I got to see yesterday they really care about their employees.

Update

May 28:
Travis and I celebrated our 1 year wedding anniversary.  It came up faster then we wanted to.  Travis is one of the greatest man I have ever know.  I love him more then words can tell.  I am one lucky woman to find him.  My life is not boring with him, there is never ever a dull moment around here.  It has been a great year with a lot of changes.  


We went to Olbrich Botanical Gardens.  We should of been their in less then 8 minutes from our place.  But we got their 20-30mins.  Their was a lovely parade going on.  Not so great for people who have never been to this town before and trying to get out to go to the other side.  We finally made it!!!  It was a wonderful garden.  They have a Thai Pavilion garden, which is beautiful.  The also have this area called rose tower which is amazing.  It was a great place to go.  It was FREE that is the best part.  












Afterwards we went home and we played mario karts.  Then Travis made us Steak and homemade pasta.  It was really good.  After that we had our top of our wedding cake.  That right we moved it with us.  And it taste wonderful.  It was bad at all.  Then we watched house for the rest of the night.  








June 1st We had to run a errand while we where out we found out our apartment area was having a garage sale so we walked around that for hour.  We came back home and we watched house until we decided we didn't want to cook dinner.  We decided to go out to eat for once to Olive Garden.  It was so nice just to go out to eat because we wanted to.

Today Travis has a Company Picnic, should be fun.  This is it for now have a nice day!!!
